Word of mouth is the most powerful marketing tool and yes, sometimes restaurants have a bad night but at least this way they can find out where they're going wrong. A simple apology and perhaps an offer of a free meal or half price next time they visit will appease the customer and at maybe they'll come back and give you another shot. BTW love the blog - added you to my blogroll.
