A colleague of mine brought this cake into work. It is outstanding. Wet, dense and oozing with fantastic flavours. Fabulosity Factor a genuine 100%
1 cup plain flour
3/4 cup sr flour
1 tsp bicarb soda
2 tsp mixed spice
1 green apple, peeled, grated onto paper towel
1/3 cup packed brown sugar
1/2 cup honey
2 eggs beaten
125 g butter melted and cooled
1/4 cup buttermilk
1 cup chopped pecans
Bake at 180 deg C until cooked (approx 35 mins) and pour syrup over when
ready.
Syrup:
3/4 cup castor sugar
1/3 cup water
1/3 cup lemon juice
